Ingredients
- SALAD INGREDIENTS:
- 1 head of romaine leaves, left whole, washed
- 3 T parmesan, grated
- Croutons
- Ground pepper
- DRESSING INGREDIENTS:
- 1 garlic clove, mashed
- 1-2 anchovy fillets, mashed
- 1 egg yolk
- 1-2 T lemon juice
- 1 t lemon rind
- ¼ C olive oil
Instructions
- Dressing is made by smashing dressing ingredients into a cutting board. Start with the garlic... smash. Add anchovies by smashing them with the garlic. Separate egg yolk and add it to smashed garlic and anchovies on the board. Add lemon juice and rind and then add all smashed ingredients to a jar or mini food processor and slowly add the olive oil as you whisk or stir.
- Toss dressing with romaine leaves. Add in croutons, ground pepper, and parmesan and serve!!
