Ingredients
- SALAD INGREDIENTS:
- 2 bunches or 8 C lacinato kale (dino kale)
- ½ C grated parmesan
- 3 C croutons (homemade or store bought)
- DRESSING INGREDIENTS:
- 2 garlic cloves
- 3 anchovies
- 1 egg yolk
- ¼ C EVOO
- 2 T lemon juice
Instructions
- Remove leaves of kale from the center stem. Wash kale and dry thoroughly. Chop or tear into 1 inch pieces. Set aside in salad bowl.
- Dressing is made by smashing dressing ingredients into a cutting board. Start with the garlic, smash, add anchovies by smashing them with the garlic. Separate egg yolk and add it to smashed garlic and anchovies on the board. Add lemon juice and rind and then add all smashed ingredients to a jar or mini food processor and slowly add the olive oil as you whisk or stir. Add to kale and toss.
- Before you serve, up to 10 minutes before, massage greens and dressing together with your hands. Add croutons and Parmesan after this and mix all together.
- Serve!!
