For a ‘go to’ quick veggie salad, this is your best bet! Whenever you feel pressed for time but want your veggies, this is an easy ‘go to’ salad. It’s simple, with only carrot and chive/parsley, or add on the nuts and feta to bulk it up.
Carrot, Almond, Parsley, Feta, & Scallion Salad

Ingredients
- Salad
- 2-3 Large Grated Carrots
- 2 TB Chopped Chives or Scallions
- 2 TB Chopped Parsley
- ¼ C Crumbled Feta
- ¼ C Toasted Slivered or Chopped Almonds
- Dressing
- ½ C EVOO
- ⅛ C Fresh Squeezed Lemon Juice
- Salt
Instructions
- Prepare dressing. Combine EVOO, lemon juice and salt to taste. Mix until well blended.
- Prepare the carrots. Peel and wash then coarsely grate. Add to a salad bowl. Then add chives or green onions, parsley, feta and almonds. Toss with lemon olive oil dressing.
